Gas Interlock Systems are a mandatory requirement in many commercial kitchen settings, especially when introducing new canopy systems, cooker lines, or altering the layout. Additionally, they are necessary when installing Category ‘B’ equipment like ovens and deep fryers, even in cases of replacing existing layouts.
These systems, commonly known as Gas Interlock Systems (GIS), play a crucial role in shutting off gas flow in instances of kitchen extraction fan malfunction. They also ensure that the airflow rates in commercial kitchen exhaust systems adhere to the minimum standards specified in DW/172 guidelines.
Their operation involves monitoring the fans in the ventilation system using sensors placed on either side of the ductwork to measure air pressure. These sensors are linked to an air differential switch that activates when there is a change in pressure difference. Alternatively, fan power sensors can be employed to monitor the current consumption of the fans. In a 230V gas interlock system, the switch or sensor is under constant surveillance, and should a fan malfunction occur, the gas solenoid valve is promptly closed to halt gas flow to the appliances.
